Sushi Rolls

Here is a recipe for some delicious sushi rolls. It is slightly difficult but its worth it:

Ingredients:
2 1/2 cups of sushi rice
3 cups of water
Sushi seaweed (nori)

for the vinegar mixture:
5 tbsp of rice vinegar
1 tbsp of mirin
3 tbsp of sugar
2 tsp salt

For the fillings:
I sugest using:
Cucumber, avacados, smoked salmon but u can use anything really.

Utensils:
Rice steamer or large saucepan
Large glass platter
Bamboo rolling mat

Method
Cook the rice as so. While it's cooking combine all the vinegar mixture ingredients (5 tbsp of rice vinegar, 1 tbsp of mirin, 3 tbsp of sugar, 2 tsp salt) into a small sauce pan and heat to dissolve the sugar stirring continuously. Then leave it to cool.
Spread the rice on your biggest shallow platter (non metallic) and coat with the vinegar mixture. Then leave it to cool.
Place 1/2 sheet of nori onto the rolling mat with the shiny side down (1cm from the bottom of the mat). Then wet your hands and spread a handful of rice over the nori. It should be 1cm thick leaving a margin at the top of the nori of about 2cm.
Place your filling in the centre of the rice lengthways and while holding the filling lift the bottom of the mat and fold it quickly over the filling. then take the mat away making sure that the sushi roll is secure. Then roll it gently with your palms to form a complete roll. It gets easier with a little bit of practice.
Then wet a sharp knife and cut the roll into 6 pieces. Place them onto a plate with a little bit of soy sauce and the ENGOY!!!
